3 Fun Salad Recipes that Excite!!

When you hear the word “salad”, you immediately think of a green leaf salad. Although salads are always a refreshing meal choice, it can get monotonous if you don’t change it up. Salads don’t only have to consist of lettuce and dressing… in fact you don’t have to have lettuce at all! Try these salad recipes to shake up your meals and keep things exciting!
Tomato Avocado Salad: Lettuce-less salad that is quick and easy to make. You’ll need:
1/4 Red Onion
2 Tbsp Feta Cheese
1-2 Tbsp Balsamic Vinaigrette
First, cut the tomatoes and avocados in edible sized bites and mix them together in a salad bowl. Then, dice the red onions and mix it in with the tomatoes and avocados. Then, add feta cheese. Next, sprinkle some Black Pepper to taste. Finally, carefully add Balsamic Vinaigrette to taste. If you’d like to sweeten the salad up a little bit, you can add honey.
Note: If you don’t like red onions, you can replace it with chopped scallions for spice!
Arugula, Mushroom, and Shrimp Salad: The perfect summer salad. You’ll need:
2 Tbsp Balsamic Vinaigrette
1-2 Tbsp Fresh Lemon Juice
1 cup sliced mushrooms
4 handfuls of arugula
Shaved parmesan cheese
1-2 chopped garlic cloves
First, mix the vinaigrette and lemon juice. Add Pepper if you’d liked. Then, in a bowl, mix mushrooms and arugula and toss it in the vinaigrette dressing. Next, in a pan on medium-high heat, heat up a tablespoon of olive oil. Add the chopped garlic and place the shrimp on the pan. Add a bit of salt and pepper to taste while the shrimp is cooking. Cook shrimp until it is completely pink and there are no transparent parts. Finally, add the shrimp to your salad and toss in some shaved parmesan cheese!
Note: if you don’t like shrimp, replace it with diced chicken or salmon filet.
Fruity Kale Salad: Perfect to replace dessert! You’ll need:
1 bunch of kale
4 Clementine’s (peeled and sliced)
Handful of dried cranberries
1/3 cup crumbled feta
1 diced avocado
3-4 tablespoons olive oil
2 teaspoons of acacia honey (or agave nectar)
1 teaspoon Dijon mustard
3 tablespoons fresh lime juice
First, make the dressing by thoroughly mixing all of the ingredients in a small bowl. Then make the salad by chopping the kale into bite sized pieces. (If you prefer to steam the kale first, you can). Next, drizzle the dressing all over the kale and add avocado, clementine, feta, and dried cranberries into the bowl. If you’d like to add some extra flavor, then add some chopped cilantro.
