3 Healthy and Delicious Dinner Recipes

            Just because you’re eating healthy or are on a diet, doesn’t mean you have to eat bland. Remember, being healthy is a way of life and you can make it delicious! Here are some healthy and delicious dinner recipes for you to try.


Hot Kale with Chicken Dressing:        

            This recipe is one that I make often and is one of my favorites because its so easy to make. You’ll need: 

            Two yellow onions

            1 pack of ground chicken

            Beef Stock

            Greek Yogurt


 Cut the yellow onions into slices. Then sauté them in a pan on medium heat with a touch of olive oil. When sautéed to your liking, put them on a side plate to keep for later. In the empty pan, add the ground chicken and cook until done (usually takes 5-7 minutes). Then add some beef stock followed by 2 cups of greek yogurt. Stir everything and make sure that the beef stock is blended well with the yogurt. Add more yogurt and beef stock as needed. Put the heat on low and add the onion back into the pan, while continuing to stir. Let the sauce warm up and in a separate pan, add 1 cup of water and bring it to a boil between medium and high heat. Put in as much kale as possible into the pan and cover it with a lid. Let the kale steam up for a couple minutes until it turns colors from an ashy green to a rich deep green, which means it’s ready. It usually only takes about 2-3 minutes in the steamer. Now your’e ready to eat! Put the kale on a plate and pour as much chicken yogurt sauce on it!


Gluten Free Cauliflower Fried Rice:

            It tastes just like fried rice without all the carbs! You’ll need:

            - 3 cups of grated Raw Cauliflower

            - 1/2 cup of chopped carrots

            - 4 minced cloves of garlic

            - 1/2 cup of dice onion

            - 1/2 tablespoon of olive oil

            - 2 eggs

            - 3 tablespoons of low sodium soy sauce

First, in a large pan, sauté the garlic and onions in olive oil on medium to high heat for about 2-3 minutes. Next, add the carrots and stir for 3-4 minutes until the carrots begin to soften. Next, add the cauliflower and soy sauce and cook/stir for 5-6 minutes. Finally, add the egg and stir briefly until it is cooked. You can add whatever vegetables and protein you like!


Zucchini Noodles with Low Calorie Pesto 

            Everyone loves pasta! Now you can indulge without having to worry about overloading on the carbs! You’ll need:


            Julienne Slicer/Peeler

            2 Cups of sliced fresh basil

            1/3 cup of pine nuts

            3-4 garlic cloves

            6-7 tablespoons of greek yogurt

            1/3-1/2 cup of fresh grated parmesan cheese (the key is to get the fresh kind)

            pinch of salt

            pinch of pepper

            pinch of crushed red pepper


            To make the Zucchini noodles, use a Julienne slicer and slice strings of zucchini to resemble spaghetti. Saute your zucchini noodles in a pan with a bit of olive oil to get the soft flimsy spaghetti texture. Keep the pasta warm for now on low heat.


            To make the pesto sauce, add all ingredients, except for the crushed red pepper and green yogurt, in a food processor. Pulse and Blend until all ingredients are mixed and chunky. DO NOT blend until it becomes watery. You want to make sure the ingredients are chopped/minced but not runny. Now add all ingredients including the crushed red pepper and yogurt into a pan on low heat. Heat up the pesto sauce and make sure to mix everything well. You can add more parmesan cheese if you need to. But now you’re ready to pour the pesto sauce on your zucchini noodles and mix well!
